1. Brown ground beef in separate pan.
  2. Sauté minced garlic, onion, peppers (in order) in olive oil in large pot. Wait for onions to carmelize.
  3. Drain meat. Add to large pot.
  4. Add chopped, seeded, skinned tomatos. If not enough, make up difference with canned tomatos.
  5. Add a small amount of water. Not too much. Easy to add more, difficult to take away.
  6. Add basil and oregano.
  7. Pinch of sugar, more salt, more pepper. Red wine optional.
  8. Simmer 3 hours.
