- Brown ground beef in separate pan.
- Sauté minced garlic, onion, peppers (in order) in olive oil in large pot. Wait for onions to carmelize.
- Drain meat. Add to large pot.
- Add chopped, seeded, skinned tomatos. If not enough, make up difference with canned tomatos.
- Add a small amount of water. Not too much. Easy to add more, difficult to take away.
- Add basil and oregano.
- Pinch of sugar, more salt, more pepper. Red wine optional.
- Simmer 3 hours.
